ABOUT US.

We are two close friends that had been in each other’s life for almost 20 years. Initially bonded over food, and started doing everything together, from doing homework, applying to the same universities, working in the same places, to traveling to the ends of earth together. This year, we have finally decided to live out our dream of doing something together that involves great food and experience.

 

Meet Jeff, he loves to cook.

Having graduated from Alma Scuola Cucina in Parma, Italy. Jeff worked in multiple restaurants in Italy, including a famous seafood restaurant, Taverna del Porto, and a Michelin-starred restaurant, L'Erba del Re, before moving back to Hong Kong for his next adventure. Now he is the founder and creator of all our chicken breasts. He takes immense pride in the work he does to bring our customers the very best breasts.

Meet Teresa, she loves to design.

Teresa is destined for a life in making things pretty, being the co-founder and marketing director at Pollo Up by day, a digital designer by night. Given the nature of her job, she is trained to ask a lot of questions, and that curiosity prohibits her from “offering help” in Jeff’s kitchen. She steers Pollo Up’s social media, brand development and she is the official chicken breast taste tester.

Pollo Up started as a passion project. For the past few years, we have been going to the gym together. Every time after our workout sessions, we would be desperate for food to replenish, but struggle to find healthy and accessible protein we could enjoy. 

Therefore, Jeff got his first sous vide machine and started spending hundreds of hours experimenting. He had a certain obsession with perfecting the flavors and textures of chicken breasts. We loved sharing our obsession with our friends…so we said “Why don’t we open our own shop!”
